Tropical Gazpacho

Ingredients

Tropical Gazpacho
3 mangoes- peeled and cut into chunks (about 5 cups worth)
2 cucumbers Ė peeled, seeded and chopped
2 cups buttermilk
1 Tablespoon lime juice
1 Teaspoon rice vinegar
coarse salt
hot sauce (optional)
basil leaves (optional)

Directions

Working in batches, blend together mangoes, cucumber, buttermilk, lime juice and vinegar in blender. Blend until desired consistency. Season with salt and, if using, hot sauce. Refrigerate until chilled. If youíd like, garnish with basil.
